At Lauren Ashley Design, we don't just design spaces—we create memories, and that often includes sharing meals with loved ones. Today, we’re excited to share a favorite recipe from Josh, our CFO, who also happens to be a lawyer with a passion for cooking. He knows his way around the kitchen. If you’re a fan of bold flavors and creamy pasta dishes, Josh’s Cajun Chicken Alfredo is sure to become a household favorite. Let’s dive in!
Cajun Chicken Alfredo
Ingredients
Chicken:
2 packs of chicken tenderloins
Seasonings:
Smoked paprika
Slap Ya Mama Cajun seasoning
Onion powder
Garlic powder
Black pepper
Cajun seasoning
Alfredo Sauce:
3/4 stick butter
2 cloves garlic
3/4 cup heavy cream
2 cups Parmesan cheese
Additional cheeses as needed (Gouda, Swiss, mozzarella)
Pasta:
Your favorite pasta noodles (fettuccine, penne, or linguine work well!)
Salt, black pepper, and Slap Ya Mama Cajun seasoning for boiling water
Directions
Chicken Preparation:
Season the Chicken: Generously coat the chicken tenderloins with smoked paprika, Slap Ya Mama, onion powder, garlic powder, black pepper, and Cajun seasoning. For the best flavor, let the tenders marinate in the refrigerator for at least two hours.
Cook the Chicken: Cut the tenders into bite-sized pieces and cook them in a skillet with a mix of olive oil and avocado oil. Halfway through cooking, sprinkle extra smoked paprika and Slap Ya Mama for an added kick.
Pasta:
3. Boil the Pasta: In a large pot of water, season with salt, black pepper, and Slap Ya Mama. Bring to a boil, then add your noodles. Cook until just shy of al dente.
4. Combine with Chicken: Drain the noodles and add them to the skillet with the cooked chicken. Let them sit on low heat while preparing the Alfredo sauce.
Alfredo Sauce:
5. Start the Sauce: Melt 3/4 stick of butter in a saucepan with two cloves of garlic. Cook until the garlic’s aroma is strong and fragrant.
6. Add Cream: Stir in 3/4 cup of heavy cream and let it simmer for about two minutes.
7. Incorporate Cheese: Gradually add Parmesan cheese (about 2 cups) and mix until melted and creamy. For extra indulgence, include Gouda, Swiss, or mozzarella as desired.
8. Strain the Sauce: For a smoother texture, drain the sauce to remove the garlic pieces before adding it to the pasta and chicken.
Bringing It All Together:
9. Combine: Pour the Alfredo sauce into the pot with the chicken and noodles. Stir thoroughly to ensure every bite is coated in creamy goodness.
10. Season: Add a final sprinkle of smoked paprika and black pepper to taste.
Serve & Enjoy: Dish up your Cajun Chicken Alfredo and enjoy a plateful of comfort and spice. Whether it’s a cozy family dinner or a date night at home, this dish is bound to impress.
